WILD RICE SUSHI ROLLS
2 ½ cups cooked, combined
broken wild rice
and
botan sushi rice
, prepared with
vegetarian seasoning
.

Nori sheets
2 Tb. Rice Vinegar
1 cucumber, sliced into julienne strips or matchsticks
2 carrots, sliced into julienne strips or matchsticks
½ of a red or yellow bell pepper, sliced thin into julienne strips or matchsticks
1 avocado, sliced thin
1 fillet of your favorite fish, cooked & sliced
Soy sauce &
wasabi
for dipping
Meanwhile, add rice vinegar to cooled, cooked rice and mix.
Lay a sushi mat on a cutting board.
Place one sheet of Nori on a sushi mat and spread rice evenly on the Nori sheet.
Place carrots, cucumbers, avocado, peppers, and fish slices in a row about an inch from the edge closest to you.
With the sushi mat roll over the carrots, cucumbers, avocado, and fish tightly. Continue rolling until you have a roll.
Slice the roll into 1 inch wide pieces.
Serve with soy sauce and wasabi.
