JAMAICAN RICE AND BEANS
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1½ cups Basmati Rice
  • ¼ cup cream of coconut
  • ¾ teaspoon salt
  • 2 cups cooked Beans

In a saucepan, heat oil over medium heat. Add onion and garlic; cook 5 minutes. Add rice, cream of coconut, salt and 3¼ cups water; bring to a boil. Reduce heat to low; cover and simmer 15 minutes. Stir in beans and cook 5 minutes more. Yields 6 servings.
