sultry mango wild rice salad
 


Salad Ingredients:

1/2 cup Special Basmati Blend 2 ripe, firm mangoes, peeled and diced1 med. red bell pepper, diced
1/2 cup diced red onion
1/2 cup chopped fresh cilantro
1/2 cup shelled pistachios, coarsely chopped

Dressing Ingredients:

1/3 cup fresh orange juice
1/4 cup extra virgin olive oil
3 tbs. cider vinegar
1 1/2 tsp ground cumin
1 clove garlic, minced
1/4 tsp salt
1/8 tsp freshly ground black pepper

Directions:

  1. Bring large saucepan of lightly salted water to boil over med-high heat.  Add wild rice, cover and reduce heat to med-low.  Cook 45-55min or until grains are tender and starting to split.  Drain and rinse under cold running water.
  2. Toss in all remaining salad ingredients with cooled rice (except the pistachios).
  3. Whisk together dressing ingredients in a large bowl.  Toss salad ingredients (except pistachios) with dressing to coat.  Sprinkle with pistachios and serve.
