MEXICAN RICE & ORZO SALAD
  • 1 cup Black Japonica Rice, cooked and cooled
  • 1 cup Plain Orzo, cooked and cooled
  • 1 can white and yellow mix Corn, drained
  • 1 can Black Beans, drained and mixed
  • 1 can mild or spicy Salsa
  • 1 large Roma Tomato, seeded and diced
  • 3/4 cup diced green Onion
  • 1/4 cup diced red Onion
  • 1 green Pepper, seeded and diced
  • 1 yellow Pepper, seeded and diced
  • 1 can sliced black Olives, drained
  • 2 tsp. Cumin powder
  • 1 Tbsp. dried Parsley
  • 2 tsp. Garlic powder
  • 1 fresh Lime, squeezed

Combine all ingredients, toss lightly until mixed.  Chill and serve.
