1/2 cup red wine vinegar1/4 cup fresh lemon juice2 teaspoons honey2 teaspoons salt3/4 teaspoon freshly ground black pepper1 cup extra-virgin olive oil
Prepare orzo with vegetarian seasoning, then rinse and cool. Toss orzo with dressing. Layer orzo on lettuce in tortilla with feta cheese, diced onions, black olives, tomatoes and meat (optional). Squeeze lemon on top and serve.
