POSOLE

 

  • 1#  ground seasoned pork sausage
  • 3 cups chicken broth
  • 2 cups cooked black beans
  • 2 cups cooked white Posole
  • ¾ cup salsa, medium heat
  • 2 cups stewed tomatoes
  • 1 ½ cups hash brown potatoes, shredded, frozen, frozen, shredded
  • 2/3 cup green bell peppers, diced
  • 2/3 cup onions, diced
  • 2 cloves garlic, minced
  • ¾ tsp. cumin
  • 1 tsp. Oregano

Brown the sausage in a saucepan.  Drain pan drippings.  Sautee peppers and onion until tender, stir in remaining ingredients.  Bring to a boil, reduce heat and simmer for 30 minutes or until thick.
