QUINOA 'N PEPPERS...HERBED
  • 8 ounces of Quinoa                    Herbs of your choice
  • 2 cups chicken broth                  ¼ teaspoon salt
  • 1 teaspoon minced garlic
  • 1 red bell pepper, roasted, peeled, seeded, chopped
  • 1 yellow bell pepper, roasted, peeled, seeded, chopped

Bring chicken broth to a boil; stir in quinoa, seasoning packet, garlic and salt. Simmer, covered, until liquid is absorbed and quinoa appears translucent (10-15 minutes). Stir in peppers; serve immediately.
