WHITE BEANS WITH TOMATO, BASIL AND PARMESAN

Here is a versatile recipe that can be served hot or cold, as a main course or as a side dish. It is especially nice served over cooked pasta.

  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 3 cups cooked Beans
  • 1 large tomato, chopped
  • ¼ cup minced fresh basil or parsley
  • ½ cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • Basil leaves for garnish

In a 12" nonstick skillet, heat the oil over low heat. Add the garlic and cook, stirring occasionally, for 4 minutes or until lightly colored and fragrant. Stir in the beans, tomato and minced basil and cook for 7 minutes or until heated through and the tomato has released its juices. Stir in the cheese and lemon juice. Serve hot or at room temperature. Garnish with the basil leaves if desired. Serves 4 as a main course, 8 as a side dish.
