CHICKEN SALAD WITH WILD RICE

  • 2 Cups Premium Wild Rice, cooked and cooled
  • 3 Scallions, chopped
  • 2 Cups chopped cooked chicken
  • ½ Cups olive oil
  • 2 Tablespoons white wine vinegar
  • 2 Tablespoons Dijon mustard
  • 1 Tablespoon chunky peanut butter
  • Salt and pepper to taste

Mix the wild rice and chicken in a bowl. In a separate bowl blend the oil and vinegar, add the mustard and peanut butter and blend. Pour the dressing over the wild rice and chicken and stir until all the rice and meat is coated. Adjust the seasonings. If desired, roasted walnuts can be sprinkled on top.
