Kermes Rice is a rice that is native to the Hebei region in eastern China. Known for its natural red color and high amino acid content, this heirloom variety has only recently been rescued from obscurity and extinction. Moderate in length and gluten free, this rice contains twice the amino acid content of more common varieties; this assists in the production of proteins and can increase the hemoglobin in the blood. Kermes Rice may be used in place of Himalayan Red Rice.

Recommended Preparation Instructions:

Place 1 cup of rice and 3 cups of water in sauce pan, cover with tight fitting lid.  Bring to boil, then lower and simmer for 40 minutes.  Let stand 5 minutes.  One cup dry yields 2½ cups cooked.
