WILD RICE SUSHI ROLLS
  • 2 ½ cups cooked, combined broken wild rice and botan sushi rice, prepared with vegetarian seasoning.
  • 4-6 Nori sheets
  • 2 Tb. Rice Vinegar
  • 1 cucumber, sliced into julienne strips or matchsticks
  • 2 carrots, sliced into julienne strips or matchsticks
  • ½ of a red or yellow bell pepper, sliced thin into julienne strips or matchsticks
  • 1 avocado, sliced thin
  • 1 fillet of your favorite fish, cooked & sliced 
  • Soy sauce & wasabi for dipping

Meanwhile, add rice vinegar to cooled, cooked rice and mix.

  1. Lay a sushi mat on a cutting board.
  2. Place one sheet of Nori on a sushi mat and spread rice evenly on the Nori sheet.
  3. Place carrots, cucumbers, avocado, peppers, and fish slices in a row about an inch from the edge closest to you.
  4. With the sushi mat roll over the carrots, cucumbers, avocado, and fish tightly. Continue rolling until you have a roll.
  5. Slice the roll into 1 inch wide pieces.
  6. Serve with soy sauce and wasabi.
