Description:
Black Eyed Peas are believed to have originated in Eastern Asia. They were brought to the Americas by slave traders and have been a popular food in the Southern U.S. for hundreds of years. Black Eyed Peas are related to the Mung Bean and are sometimes referred to as Cow Pea, Field Pea, Tonkin Pea, China Pea, Marble Pea, Brown Eyed Pea, Jerusalem Pea, Black Eyed Suzy, and Lobhia. Black Eyed Peas are medium; almost white beans with a 'Black Eye' on the inner curve of the bean. They are about 3/8" long and have a sweet, mild pea-like flavor and firm, smooth texture. On New Year's Day in the South, Black Eyed Beans are traditionally thought to bring good luck for the following year. In India Black Eyed Peas are often eaten like lentils, in Africa, they are popular in different fermented dishes. In Southern cuisine, Black Eyed Peas are traditionally served with rice or cornbread. Black Eyed Peas require no soaking and have a short cook time. Rich in soluble fiber, Black Eyed Peas are a good source of protein, which provides alternatives to meat or animal protein.

Mix Black Eyed Peas with a variety of greens including Okra, Collard, and Swiss chard. Cooked with onion, garlic, and tomato sauce they make a rich and savory dish. Combine with minced beef, or mixed with vegetables, use in chili, sauces, soups, and salads. One cup dry yields 2 cups cooked.
Recommended Preparation Instructions:
Soak overnight. Rinse and place in a large pot and cover with fresh water. Bring water to a boil for 3 minutes, reduce heat and simmer, covered, for 30-45 minutes until tender. Do not over stir or the soft skins con be damaged.
