Many know Sorghum as a source for the thick golden-colored syrup derived from this hearty drought-resistant plant, but this versatile grain has many uses! This small grain adds depth to what you're cooking with a slightly sweet flavor; it can be popped and used on top of salads or cereals and fruit. Ground into flour, sorghum can be used as a substitute for wheat flour after being mixed with a binding agent for gluten-free recipes.

• Pop like popcorn and top with a variety of savory or sweet toppings, from grated cheese or garlic powder to cinnamon sugar or caramel sauce
• Mix popped Sorghum with nuts for a high-protein snack
• Cook like rice or pasta, and substitute in salads, casseroles, soups, and side dishes
Recommended Preparation Instructions:
To pop, pour one cup of Sorghum into a heavy saucepan with 1/3 cup of canola oil. Make sure the kernels are in a single layer. Cover saucepan and place over high heat. Kernels will pop like popcorn. Note: Approximately 60 to 70% of Sorghum kernels will pop.
To cook, place 1 cup of Sorghum in a saucepan with 4 cups of water. Bring to a boil, reduce heat, and simmer, covered, for 40-45 minutes.
