• 1/2 cup Black Japonica, cooked in Chieftain's Vegetarian Seasoning
  • 3 cups Croutons
  • 1/2 cup chopped green Onions
  • 1 cup chopped Celery
  • 3 cups vegetarian chicken flavored Stock
  • 2 Eggs
  • 1 tsp Poultry Seasoning or Sage
  • 1/2 cup rehydrated Shiitake Mushrooms, kibbled
  • 1 tbsp Butter

In saucepan, heat butter until melted. Saute mushrooms, celery and onions until tender, add broth.  Beat the eggs and seasoning in bowl, add croutons, broth mixture and cooked rice.  Combine until blended well. Put stuffing in buttered dish and bake until brown and slightly crunchy on the outside yet tender on the inside.
