AUTUMN LENTILS WITH ANDOULE SAUSAGE
  • 1 cup uncooked Autumn Lentil Blend
  • 2 tablespoons olive oil
  • 2 cloves of garlic, minced
  • 1 medium onion, chopped
  • 1 green bell pepper, seeded and diced
  • 1 red bell pepper, seeded and diced
  • 2 carrots, diced
  • 1 pound Andoule sausage, cut into bite size pieces (if unavailable, use Italian sausage)
  • 3 cups water or chicken stock
  • Salt and pepper to taste
Sauté sausage, onions and garlic in olive oil until onions are translucent. Add peppers and carrots, sauté for 5 more minutes. Add autumn lentil blend and liquid; bring to boil, reduce heat to simmer. Cook, covered for 25-30 minutes. Add additional liquid if stew becomes too thick
