STUFFED BAKED APPLES
  • 1/4 cup walnuts, diced
  • 4 medium sized, firm, baking apples
  • 1/4 cup dry black mission figs, diced
  • grated peel from one orange
  • 1/4 tsp. cinnamon
  • 3 Tbsp. light brown sugar
  • 4 cloves
  • apple juice

Preheat oven to 350.  Partially core the apples, leaving 1/2 inch of the apple intact at the base.  In a bowl, blend all the ingredients except the apple juice and clove.  Stuff the mixture into the four apple cavities.  Stick one clove on the top of each stuffed apple.  Place the apples in a deep baking dish.  Pour apple juice into the pan so that there is one inch of juice on the bottom of the pan.  Cover and bake for 45 minutes.  The apples should yield easily to a fork when they are done.  Some varieties will have different cooking times, so watch the apples while they are cooking.
