LOWCOUNTRY RED RICE, CAJUN STYLE
  • 6 Tablespoons Extra Virgin Olive Oil
  • 1/2 Pound Kielbasa sausage, chopped onto small pieces
  • 1/2 Pound Andouille sausage, chopped onto small pieces
  • 1 Pound Small Shrimp, shelled with tails off
  • 1 Cup Cajun Style Dirty Rice
  • 1 Cup cooked Anasazi Beans
  • 1 3/4 Cups Stock Or Water
  • 1 Tablespoon Butter

Heat Dutch oven to medium high. Add extra virgin olive oil, sausages and shrimp, fry until slightly browned. 

Add Cajun Dirty Rice, Anasazi beans, stock and butter to pot. Bring to a boil over high heat. Cover, reduce heat to low and simmer for 14 to 16 minutes. Remove from heat and let stand, with cover, for 5 minutes. Fluff rice with fork and serve immediately.
