  • ·4 cups cooked Spring Blend with garlic peppercorn seasoning


    ·2 cups cooked black beans

    ·1 cup corn, fresh or frozen

    ·1 cup chopped red or yellow tomatoes

    ·1 ½ cups chopped red/yellow/green bell peppers

    ·¼ cup cilantro, minced

    ·¼ cup chopped red onions

    ·1/3 cup lime juice

    ·½ cup flavored olive oil

    ·1 tsp. ground cumin

    ·1 Tbsp. smoked sweet paprika

    ·salt and pepper to taste


    In a large bowl, combine the black beans, corn, tomatoes, cilantro and onions. In a small bowl, whisk the lime juice, oil, cumin, salt and pepper.Mix the cooked Spring Blend into the bean mixture the rice into the bean mixture and drizzle the dressing on top.
