JALAPENO BEANS
  • 4 cups cooked, drained, Beans
  • ½ cup diced bell peppers
  • 1 tablespoon fresh lime juice
  • 2 fresh jalapeño peppers, sliced (or to taste)
  • 1 teaspoon ground cumin
  • 1 teaspoon maple syrup (or to taste)
  • Salt and pepper to taste

Combine all ingredients in a medium-sized saucepan over medium heat. Cook for about 5 minutes or until flavors have blended and beans are hot. Serve immediately or cover and refrigerate until ready to use, as this dish may be served hot or cold. Serves 6.
