WILD RICE PICO DE GALLO
  • 1 cup Calico Blend, cooked and cooled
  • 1 bunch fresh cilantro, washed and chopped
  • 12 oz cooked black beans, rinsed
  • Juice of 2 medium limes
  • 3 medium tomatoes, diced small
  • 4 green onions, chopped
  • 1 yellow pepper, chopped
  • Salt to taste

Add ingredients together and toss to blend.  Season ingredients to taste with salt then chill for approximately 1 hour for the flavors to blend.  Serve with chips or spread on tortillas for enchiladas, tacos or use as a colorful side.
