Spicy Ginger Marinade

  • 2 tablespoons soy sauce
  • 6 star anise
  • 4 tablespoons vermouth
  • 1 teaspoon crystalized ginger
  • 1 garlic clove crushed
  • 2 tablespoons chopped cilantro
  • 1 guajillo chile, seeded and chopped

Mix all ingredients for marinade together in shallow bowl.  Coat salmon in the marinade, place in fridge for at least 2 hours.  Remove salmon and pat dry, coat with five spice powder.  Sear in hot oil on both sides. Serve with seared pineapple rings.
