WILD RICE AND SPELT SALAD

Hearty Wild Rice and Spelt Salad

  • 1 cup cooked wild rice, (cooked in chicken stock)
  • 1 cup spelt, cooked
  • 1/2 cup broccoli florets, blanched
  • 1/2 cup cauliflower florets, blanched
  • 1/2 cup red or yellow bell pepper, chopped
  • 2 green onions, chopped
  • 1/4 cup dried apricots, chopped
  • 1/4 cup dried cranberries
  • 1/4 cup roasted almonds, chopped

Dressing

  • 3 tablespoon rice vinegar
  • 3 tablespoon extra virgin olive oil
  • dash of lemon juice
  • salt & pepper to taste

Mix all ingredients and toss together.  Chill for 30 minutes before serving.
