Cook Sunshine Orzo Blend according to package instructions; when done, drain and place in bowl. In skillet, melt butter and saute mushrooms and shallots for 3 to 5 minutes or until mushrooms are a golden brown.
Add chopped Kale and cook a few minutes more until kale is tender. Do not overcook kale. Add the mushrooms, shallots, kale and fried bacon to orzo in bowl and toss together to blend. Salt and pepper to taste. Can be served warm or cold.
