  • 1 tablespoon five-spice powder
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons sake
  • 2 tablespoons rice vinegar
  • 2 tablespoons tamari
  • 1/4 cup sesame oil
  • 2 pounds ahi tuna steaks, each about 1 inch thick
  • 1 pound wasabi peas, crushed
  • 2 tablespoons light brown sugar

In a large bowl, whisk together the first six ingredients.  Place tuna steaks in marinade for approximately 30 minutes flipping steaks part way through.   Drain steaks from marinade reserving the liquid.  Combine crushed Wasabi Peas with Brown Sugar.  Coat the tuna steaks in the pea mixture then sear tuna in small amount of oil in a skillet over med/high heat to desired doneness.  While the fish is cooking, add reserved marinade to small saucepan and bring to a simmer over med/high heat.  Cook until sauce has reduced and thickened.  About 5 to 10 minutes.
