  • 1 package frozen spinach, thawed
  • 1 cup Ricotta cheese
  • 1 cup cooked Dry Roasted Premium Wild Rice with Garlic Peppercorn seasoning
  • 1 cup grated Parmesan Cheese
  • 2 cloves of garlic, minced
  • 2 eggs
  • 1 cup Italian style Panko breadcrumbs
  • Salt and pepper to taste
  • Olive oil

Thaw spinach and squeeze to remove moisture.  Chop spinach and set aside.  In a large bowl mix Ricotta and Parmesan cheese, garlic, 1 egg and 2 tablespoons of Panko breadcrumbs, Add spinach and cooked rice and mix well.  Form mixture into small balls.  In small bowl beat the remaining egg.  Dip spinach balls into egg then roll in breadcrumbs.  Heat Olive oil in skillet and fry until golden brown.  Drain garnish and serve. 

Alternative methods: roll mixture into balls, place each ball into square of puff pastry, pinch shut at top and bake in hot oven until done.
