Wild Rice Grain Bowl

  • 10 oz package Rice River Farms Rodeo Rice Blend, prepared per package directions

  • 2 tbs butter

  • 1 ½ cups red, orange and yellow bell peppers, cut julienne

  • ½ cup red onion, sliced in thin strips

  • 4 chicken breasts, grilled and sliced into 1-inch strips

  • 1 can black olives, drained and sliced

  • 2 avocados, skinned and sliced

  • ruffled lettuce

Toppings…

  • cherry tomatoes, halved

  • 1 bunch green onions, diced (including the green part)

  • Sour cream

  • cilantro leaves

  • lemon or lime juice

  • guacamole sauce

  • chunky salsa

  • shredded cheese

  • chips or flour tortillas

Recipe Directions:

Prepare rice per package directions.


While rice is cooking, in skillet, melt butter and sauté the red onion with the red, orange and yellow bell peppers until tender. Remove from heat.


Set up four large, shallow bowls and place ruffled lettuce along half of the edge of each bowl. Place a large spoonful or two of rice against the lettuce and then add equal portions of chicken strips, olives, and avocados. Top with your favorite toppings to create a delicious wild rice grain bowl.


Makes 4 servings.
