SMOKY ANASAZI BEANS
  • 2 cup cooked, cooled and drained anasazi beans
  • 1 small red onion, diced
  • 4 cloves of garlic, minced fine
  • 1 cup brown sugar
  • 8 oz ketchup
  • 2 teaspoons dry ground mustard
  • 1 tablespoon Worcestershire sauce
  • 4 smoked ham hocks or smoked meat of choice

Saute the onion & garlic until translucent. Add the brown sugar, ketchup, mustard and Worcestershire sauce. Bring to a brisk boil for about 2 minutes, stirring frequently. Add beans and bring to a boil. Season to taste, place in a covered baking dish and arrange hocks or smoked meat on top. Bake in a preheated oven at 350 for 1 hour. Remove the cover and bake uncovered for 15 minutes. Remove from the oven and serve.
