Wild Rice Cookies
  • 2 eggs
  • 1 1/2 cup butter, softened
  • 2 cups brown sugar
  • 2 tablespoons water
  • 1 teaspoon vanilla or almond extract
  • 3 3/4 to 4 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup Select Wild Rice, cooked and cooled
  • 1/2 cup raisins

Cream the eggs, butter, sugar, water, and vanilla in a large mixing bowl until light and fluffy. Mix flour, salt, and baking soda in a separate bowl; blend into creamed mixture. Stir in wild rice and raisins.

Drop by rounded teaspoonful onto lightly greased baking sheets and bake at 350degrees for 10-12 minutes or until cookies are lightly browned but soft textured.  Makes about 6 dozen cookies.
