10 oz package Rice River Farms Northwoods Blend (or wild rice blend of your choice), prepared per package directions
1# pork sausage
4 green onions, chopped
2 pkg, 14 oz coleslaw mix
½ - ¾ cup of favorite Oriental sauce
Peanuts or chow Mein noodles, optional
Recipe Directions:
Prepare Rice River Farms Rice Blend per package directions.
Brown sausage in large skillet over medium heat until cooked. Add green onions and sauté about 1 minute. Place 1 package of coleslaw mix in skillet and continue cooking while stirring until the coleslaw is slightly wilted. Combine the remaining coleslaw mix with the skillet ingredients and cook again until slightly wilted. Add sauce to cooked rice, making sure it is moist, then combine rice with coleslaw mixture. Toss together until all ingredients are coated well with the sauce. Serve garnished with peanuts or chow mein noodles.
Makes 5 to 6 servings.
Variations…
Substitute shrimp or shredded chicken for the pork.
Roll filling into egg roll wrap and fry until crisp, serve with dipping sauce.
Delicious as a bedding for pork chops or seafood.
