Wild Rice Veggie Salad

  • 10 oz package of Rice River Farms Wild Italian Blend (or wild rice blend of your choice), prepared per package directions, then chill

  • 10 oz frozen green peas, thawed

  • 1 large bunch of asparagus, cooked and cut into 1 ½ inch lengths

  • 1 bag of red radishes, cleaned and thinly sliced

  • 1 bunch of green onions, cleaned and chopped

  • 1 bag of kale, chopped

  • 1 pint of strawberries, cleaned and sliced

  • Mint leaves

  • Dressing or vinaigrette of choice

Recipe Directions:

Prepare rice per package directions, then chill.


In large bowl, mix cooled rice, peas, asparagus, radishes, green onions, and kale. Toss together well then drizzle dressing or vinaigrette over the salad and toss again.


Garnish with sliced strawberries and mint leaves and serve.


Makes 6 to 8 servings.
