Combine the water, sugar and cinnamon sticks in large saucepan. Stir over medium heat until sugar dissolves; bring to a boil and reduce heat to low. Cover and simmer for 5 minutes. Add figs, orange juice and orange zest and simmer uncovered for 5 minutes. Mix in the apricots, cherries, and brandy then simmer uncovered until the fruit is tender. Remove from heat and add crystallized ginger and salt and pepper if needed. Can be served warm or chilled.
